Stuffed Chicken Thigh w/ Spicy Tomato Pasta
I tend to get really hungry out of nowhere in college at like 2 am, and I just can’t go to sleep with a hungry stomach. This one night, I was feeling ambitious over my hunger for some reason and wanted to challenge myself.
I had to chicken thighs left in the fridge, so I pounded them out and stuffed them with some provolone cheese and Italian parsley. After rolling them tightly, I wrapped them again with bacon and set them for a few minutes I the freezer to firm together. As my pasta boiled, I pan-fried the chicken thighs, carefully cooking them through while maintaining their shape.
I let the chicken thighs rest and cut them in half to show the cross-section. They paired perfectly with the spicy tomato sauce I made with the pasta, and it was such a fun late-night project on an average school day.
