Caprese Avocado Toast

I woke up one morning really craving avocado toast, but also an urge to cook something cool. With that, I had an idea to create three different types of avocado toasts. This is the third one I made.

I think caprese is one of the simplest, but amazing appetizer whenever I go out to eat at an Italian restaurant. Although bold, heavy flavors are something I look for in food since thats what make you feel full, I also love freshness in every dish that I eat. Caprese for me is the ultimate plate of freshness that doesn’t feel like some healthy filler in a meal. Therefore, I wanted to make an avocado toast with a caprese topping!

I cut fresh tomatoes and a ball of mozzarella into similar sizes, then laid strips of basil over the top. A little extra virgin olive oil, a drizzle of balsamic, and a sprinkle of salt and pepper brought everything together.
