Spam Egg Fried Rice
I don’t care what anybody says, spam is awesome! I didn’t necessarily grow up with spam a lot, but it was those every once I a while treats that never disappointed me. There is something so distinct about it, and it just pairs so perfectly with rice.
Spam fried rice is one of my go-to college meals, the few times I do have spam lying around. I cut the spam into cubes and fry them off in a pan, then take them out when some good color is on two sides. Fried rice is all about speed and technique, so once the fresh oil is hot, the garlic, eggs, and rice go in. I toss quickly and check if the pan is getting too dry or too cold. I adjust the flavors with salt and white pepper until everything is fragrant and tossed evenly. I finally throw the spam back in with green onions as a garnish. It is so quick and easy, but the nostalgia that spam is what takes it to a different level.
