Japanese Salisbury Steak (ハンバーグ)

Ham-bāgu

I made a new friend from Korea once, and after telling her that I was from Japan, she got really excited about ハンバーグ. She told me how much she loved it and that she always wanted to learn how to make it. This got me a little homesick, reminded me of the ハンバーグ that my Mother makes.

I mixed a 7:3 mix of ground beef and ground pork, some caramelized onion, and panko bread crumbs soaked in milk. Form the meatballs into the shape of little footballs while knocking as much air out of them. After a perfect combination of searing and steaming in a pan to retain all the juices within, I made the sauce with ketchup and worcestershire sauce.

Plated with a mound of rice, some steamed vegetables, and garnished with a little heavy cream, really brought back a warm feeling that still can’t quite beat the nostalgia of Mom’s.
