Porchetta Roast w/ Brown Butter Potatoes and Truffle Balsamic Salad

I've always wanted to try a proper porchetta. It's one of those dishes that looks intimidating from the outside, but once you break it down, it's really just patience and good seasoning. I got a pork belly, butterflied it out, and packed the inside with garlic, rosemary, and lemon zest before rolling it up tight and tying it off. 

The key to a good porchetta is the skin. I let it dry out uncovered in the fridge overnight, then roasted it low and slow before cranking the heat at the end to blister the skin into that shattering crackling everyone fights over. While it rested, I made brown butter potatoes, browning the butter first so it carried that nutty, almost hazelnut flavor into every potato before they went in the oven. 

For the side, I wanted something to cut through all that richness, so I made a simple salad with a truffle balsamic dressing. Just enough earthiness to complement the pork without competing with it. Slicing into the porchetta and seeing that tight spiral of herbs was one of those quiet, proud moments in the kitchen.
