Salmon Lemon Cream Pasta

I don’t make cream sauce pastas very often, but I decided to make this dish with what I just had lying around in my fridge. I just knew lemon, cream, and salmon go amazingly together, so I gotta do what a college student has to do and just put them together to make it work.

The pasta was boiled until a little before al dente, then finished cooking in a cream sauce I made with some garlic and onions. As the salmon was close to done cooking and resting, I added a handful of spinach, a good squeeze of lemon, and a sprinkle of parsley into the pasta. Even though the salmon and the pasta together would’ve been great, I thought it could’ve used a little more brightness that complemented everything, so I blistered some tomatoes on the vine in a pan and plated them on the side, which gave a pop of color in the final dish.

The only thing that I need to do better for this dish next time is to cut the lemon pieces on top more evenly :(  I’m so annoyed by it now that I look at it, but I swear if I’m making this for another person, they are going to get my best!!!
